Steps

  • Combine the apple, celery, 100g chicken, 50g walnuts, and rocket in a large bowl and mix well.
  • Whisk two egg yolks and 5ml mustard together in a separate mixing bowl.
  • Gradually whisk in 290ml vegetable oil continuously until the mixture is fully emulsified.
  • Whisk in the lemon juice and season with salt and pepper.
