Steps

  • Heat oil in a saucepan and fry the onion and garlic until softened.
  • Add tomato purée and cook for five minutes while stirring.
  • Stir in chopped tomatoes and vegetable stock and bring to a boil.
  • Simmer for 40 minutes until the sauce has thickened.
  • Blend the sauce with a hand blender and pass through a sieve.
  • Season the sauce with salt and black pepper.
  • Fry the bacon in a separate pan until crisp.
  • Add the beans and tomato sauce to the bacon and heat through.
  • Serve the beans on toasted brioche spread with yeast extract if desired.
