Steps

  • Fry the onion, garlic, and chilli in oil for five minutes until soft.
  • Add curry paste, lime leaves, and lemongrass and cook for three minutes.
  • Stir in coconut milk, cinnamon, peanut butter, fish sauce, sugar, and half the lime juice.
  • Bring the sauce to a boil then simmer for ten minutes.
  • Slice pork into medallions and dredge them in ground cinnamon.
  • Melt butter in a pan and fry pork for five minutes until cooked through.
  • Thread pork onto skewers and place onto naan breads.
  • Spoon over the satay sauce and garnish with coriander and peanuts.
