Steps

  • Combine ham, mashed potato, parsley, chilli, and gherkins in a bowl and season.
  • Mould the mixture into cylinders approximately 7.5cm long.
  • Coat each cylinder in flour, then egg, and finally polenta.
  • Fry croquettes in vegetable oil until crisp and golden-brown, then drain on paper.
  • Melt butter in a pan and stir in the flour for 2-3 minutes.
  • Gradually whisk in the milk until the sauce is smooth.
  • Stir in the parsley and lemon juice, then season to taste.
  • Serve the croquettes drizzled with the prepared sauce.
