Steps

  • Heat oil in a deep frying pan and cook chicken, onion, and garlic for five minutes.
  • Stir in the spices and diced chilli for one minute.
  • Add 150ml of chicken stock, season, boil, and simmer for 15 minutes.
  • Heat oil in a separate pan and cook the second onion portion for five minutes.
  • Add rice, spices, mangetout, and 100ml stock, then cover and simmer for 15 minutes.
  • Stir butter into the cooked rice.
  • Serve the rice in a dish topped with the chicken curry and Greek yoghurt.
