Steps

  • Pre-heat the oven to 220°C.
  • Simmer the cream, milk, vanilla pod, and orange rind in a pan.
  • Whisk egg yolks and 110g sugar in a bowl until pale, then add the warm cream mixture.
  • Return the mixture to the pan and whisk until the custard thickens.
  • Heat grapes, 55g sugar, butter, and orange juice in a pan for 5 minutes.
  • Layer brioche slices and the grape mixture in an ovenproof dish.
  • Pour custard over the bread and bake for 10 minutes until golden.
  • Dust the pudding with icing sugar to serve.
