Steps

  • Combine tomatoes, shallots, garlic, chilli, lemon zest, lemon juice, vinegar, and pectin in a saucepan and boil.
  • Stir in the sugar and boil until the mixture reaches 103°C.
  • Remove the pan from heat and stir in the basil.
  • Cool the mixture for 20 minutes.
  • Pour the jam into sterilised jars and seal.
  • Wait for the jars to cool completely before storing.
