Steps

  • Heat olive oil in a frying pan over medium heat.
  • Fry bread cubes for 5 minutes until golden brown.
  • Add garlic and cumin and cook for 1 minute until fragrant.
  • Process bread mixture and vinegar into a paste using a mortar and pestle or food processor.
  • Return paste to the pan and stir in drained chickpeas.
  • Heat until chickpeas are hot and seasoned with salt and pepper.
  • Add spinach and cook until just wilted before serving.
