Steps

  • Heat the olive oil and 15g of butter in a large non-stick frying pan.
  • Add the saffron, onion, pepper, and tomato and sauté for 4 minutes.
  • Add the rice, cockles, mussels, squid, and 30ml of wine then simmer for 3 minutes.
  • Pour in 150ml of vegetable stock and simmer for 5 minutes until rice is tender.
  • Stir in chopped parsley and discard any unopened shellfish.
  • Serve on a plate garnished with lemon wedges and a parsley sprig.
