Steps

  • Blend prawns, spring onions, carrots, kohlrabi, galangal, mint, basil, and chilli in a processor to a coarse texture.
  • Scoop 3 cm balls of the mixture and coat them in rice flour.
  • Heat vegetable oil in a deep pan or wok until a breadcrumb sizzles.
  • Fry the balls one by one in batches until golden-brown.
  • Remove with a slotted spoon and drain on kitchen paper.
  • Serve immediately.
