Steps

  • Combine cooked rice and 70ml cream in a saucepan.
  • Add vanilla pod and seeds and heat gently for a few minutes.
  • Stir in the sugar, orange pieces, and mint.
  • Heat for a few more minutes and remove the vanilla pod.
  • Transfer mixture to a buttered gratin dish.
  • Bake for 6 to 8 minutes until set.
  • Serve the pudding immediately.
