Steps

  • Heat olive oil in a large saucepan over medium heat.
  • Cook onion, carrots, and celery with salt and pepper for 10 minutes until softened.
  • Add garlic and fry for another minute.
  • Stir in tomato purée and cook for three minutes.
  • Add tomatoes and stock, then cover and bring to a boil.
  • Reduce heat and simmer for 15 minutes.
  • Add beans and spaghetti and cook for 10 minutes.
  • Stir in cabbage and cook for two more minutes.
  • Adjust consistency with hot water if necessary.
  • Season with salt and pepper before serving.
