Steps

  • Heat oil in a large saucepan over medium heat.
  • Fry the bacon for 3 minutes until browned.
  • Add carrots, celery, garlic, and onions and fry for 5 minutes.
  • Stir in potatoes and cook for 5 minutes until softened.
  • Add tomato purée and cook for 1 minute.
  • Add tomatoes, bouquet garni, and 0.75 liters of stock and bring to a boil.
  • Simmer gently for 30 minutes.
  • Add courgettes and pasta and return to a boil.
  • Cover and simmer for 8 minutes until pasta is tender.
  • Discard the bouquet garni before serving.
  • Ladle into bowls and top with parsley and Parmesan.
