Steps

  • Heat the oil or 30g of butter in a large saucepan.
  • Add the base ingredients, aromatics, and main vegetables and sweat gently for 10 to 15 minutes.
  • Add 1 liter of stock and season with salt and pepper.
  • Bring to a boil then simmer for 20 minutes until vegetables are tender.
  • Liquidise the soup in batches and return it to the pan.
  • Thin with remaining liquid if necessary and reheat to serve.
