Steps

  • Add 50ml of rapeseed oil to a large hot pan.
  • Season the chicken and fry until golden-brown on both sides.
  • Heat a large casserole and fry the lardons in 30ml of oil until crisp.
  • Add the shallots and garlic to the casserole and cook until coloured.
  • Transfer the browned chicken pieces into the casserole.
  • Fry the wild mushrooms in butter in the frying pan for 4 minutes.
  • Stir in the Madeira, stock, cream, and tarragon, then season.
  • Pour the sauce over the chicken and simmer for 20 minutes.
  • Serve the chicken with the sauce and shaved truffle on top.
