Method

Add 50ml of rapeseed oil to a large hot pan.

Season the chicken and fry until golden-brown on both sides.

Heat a large casserole and fry the lardons in 30ml of oil until crisp.

Add the shallots and garlic to the casserole and cook until coloured.

Transfer the browned chicken pieces into the casserole.

Fry the wild mushrooms in butter in the frying pan for 4 minutes.

Stir in the Madeira, stock, cream, and tarragon, then season.

Pour the sauce over the chicken and simmer for 20 minutes.

Serve the chicken with the sauce and shaved truffle on top.
