Steps

  • Heat the oil in a frying pan and fry the onion and garlic until softened.
  • Add 100g of broccoli and 150ml of stock then simmer for 10 minutes.
  • Add 50g of Stilton and season with salt and pepper to taste.
  • Cool the mixture slightly and blend in a food processor until smooth.
  • Pour the soup into a warm bowl to serve.
