Steps

  • Mix the flour, baking powder, paprika, sugar, salt, and pepper in a bowl.
  • Whisk the eggs and milk together in a separate bowl.
  • Gradually whisk the egg mixture into the dry ingredients to form a smooth batter.
  • Mix the courgettes, sweetcorn, and spring onions together in a bowl.
  • Add enough batter to the vegetables to bind them together.
  • Heat oil in a pan and cook spoonfuls of mixture for 3 minutes per side until golden.
  • Crush the olives and mix with the remaining salsa ingredients in a bowl.
  • Serve two fritters per plate with a dollop of salsa.
