Steps

  • Heat the vegetable oil in a deep fat fryer or saucepan to 180°C.
  • Whisk eggs, cornflour, and salt in a bowl to form a thick batter.
  • Coat steak and carrot strips in batter and fry for two minutes until golden.
  • Drain fried ingredients on kitchen paper and set aside.
  • Heat one tablespoon of oil in a wok and stir-fry spring onions, ginger, garlic, and chilli for one minute.
  • Add sugar, vinegar, soy sauce, beef, and carrots to the wok and stir to combine.
  • Serve the beef with boiled rice, extra chilli slices, and lime wedges.
