Steps

  • Boil the cauliflower florets in a pan of water for 4 minutes until tender.
  • Drain the cauliflower and refresh in cold water before draining again.
  • Whisk the egg and water together in a bowl.
  • Add salt and flour to the egg mixture and beat until smooth.
  • Heat vegetable oil in a deep fryer to 180°C.
  • Dip cauliflower into the batter and fry in batches for 4 minutes until golden.
  • Drain fried fritters on kitchen paper.
  • Combine mayonnaise and curry paste in a small bowl.
  • Serve fritters with the sauce and a sprinkle of chopped coriander.
