Steps

  • Soak eight small wooden skewers in cold water for ten minutes.
  • Mix mince, garlic, coriander, and cumin in a bowl with seasoning.
  • Divide mixture into eight portions and press around skewers to form sausages.
  • Chill the skewers in the fridge on a plate.
  • Cook skewers on a hot griddle for 2-3 minutes per side until done.
  • Fry fig slices in a separate hot pan for 30 seconds per side.
  • Fry halloumi slices for one minute per side until golden-brown.
  • Whisk lemon juice and olive oil together and toss with salad leaves.
  • Plate figs and halloumi, top with salad and two kofta skewers, then drizzle dressing.
