Steps

  • Heat the groundnut oil in a wok over a high heat.
  • Add garlic and chilli to the hot oil and stir-fry for 10 seconds.
  • Add half the ginger, spring onions, water chestnuts, peanuts, and dried shrimps and stir-fry for 30 seconds.
  • Add green beans and stir-fry until they begin to blister.
  • Add rice wine, fish sauce, and soy sauce, then cook for 10 seconds.
  • Add 60 ml of hot water and steam for 4 to 5 minutes until water evaporates.
  • Add remaining ginger, sugar, white pepper, and sesame oil before serving hot.
