Steps

  • Heat ghee or oil in a lidded frying pan over medium heat.
  • Fry the meat until browned, then remove and set aside.
  • Fry the onion and garlic over low heat until soft.
  • Raise the heat, add spices, and fry for 1 minute until aromatic.
  • Return the beef to the pan, add tomatoes, and bring to a boil.
  • Remove from heat and stir in yoghurt, vinegar, salt, and sugar.
  • Return to heat and simmer covered for 90 minutes until tender.
