Steps

  • Place 200ml milk, 200ml cream, and the vanilla pod and seeds into a saucepan.
  • Bring the mixture gently to the boil, remove from heat, and discard the vanilla pod.
  • Whisk 75g sugar and 2 egg yolks together in a large bowl until pale and frothy.
  • Pour the egg mixture over the milk and cream and whisk together.
  • Pour the mixture into a clean saucepan and whisk over low heat until thickened.
  • Pour the finished custard into a jug to serve.
