Steps

  • Heat the oil in a frying pan and cook the onion, garlic, and chilli until softened.
  • Combine the 800g of chopped tomatoes into the pan and mix thoroughly.
  • Add 200ml of vinegar and 200g of sugar, bring to a boil, and simmer for 30 minutes until jam-like.
  • Season the mixture with salt and pepper to taste.
  • Fold in the capers, gherkins, and chopped coriander before serving.
