Steps

  • Combine tomato, caster sugar, chilli flakes, vinegar, and water in a non-reactive pan.
  • Simmer covered for 6 minutes until the tomato is tender.
  • Transfer the mixture to a bowl and allow it to cool.
  • Whisk the double cream, yoghurt, and icing sugar together in a separate bowl.
  • Fold the cooled tomato mixture into the cream mixture.
  • Spoon the fool into a serving dish.
  • Grate nutmeg over the top and garnish with an orange wedge before serving.
