Steps

  • Preheat the oven to 200°C.
  • Melt butter in an ovenproof frying pan over medium heat.
  • Add sugar, lime juice, and chopped nuts and cook for 3 minutes until thickened.
  • Stir in the chopped banana to coat thoroughly in the mixture.
  • Bake the banana mixture in the oven for 5 minutes.
  • Mix the Greek yoghurt and scraped vanilla seeds in a small bowl.
  • Heat a frying pan and combine honey, vanilla pod, seeds, and orange juice.
  • Simmer the orange mixture until it reaches a thick, syrupy consistency.
  • Serve bananas on a plate drizzled with glaze and the yoghurt on the side.
