Method

Infuse the teabags in 200ml of boiling water for three minutes.

Pour the tea into a saucepan with the orange juice and brown sugar.

Simmer the liquid over high heat for six minutes until reduced by half.

Add the plum pieces to the syrup and simmer for two minutes.

Serve the plums and syrup over a pile of watercress.
