Steps

  • Infuse the teabags in 200ml of boiling water for three minutes.
  • Pour the tea into a saucepan with the orange juice and brown sugar.
  • Simmer the liquid over high heat for six minutes until reduced by half.
  • Add the plum pieces to the syrup and simmer for two minutes.
  • Serve the plums and syrup over a pile of watercress.
