Steps

  • Squeeze the juice of passion fruit, limes, and orange into a bowl.
  • Scrape vanilla seeds into the juice and mix thoroughly.
  • Arrange thin slivers of sea bass on a large plate.
  • Pour the citrus mixture over the fish until almost submerged.
  • Scatter sliced red and yellow chillies over the top.
  • Cover with film and refrigerate for one hour or overnight to allow the acid to cure the fish.
  • Garnish with chopped chives and coriander leaves before serving.
