Steps

  • Combine compote ingredients except vinegar and sugar in a saucepan and heat until soft.
  • Adjust compote seasoning with vinegar or sugar and set aside.
  • Melt 25g of butter in a heavy pan.
  • Add fruit, vegetables, 100ml vinegar, 50g sugar, and 50g molasses to the pan and boil.
  • Incorporate the prepared fruit compote and simmer for 20 minutes.
  • Cool the mixture and decant into sterilised jars.
