Steps

  • Preheat the oven to 200°C.
  • Combine the dates, water, Irish stout, and bicarbonate of soda in a saucepan.
  • Simmer the mixture for 15-20 minutes until the dates break down.
  • Grease a 28cm x 18cm baking tin.
  • Beat the butter and sugar together until combined.
  • Add the beaten eggs to the butter and sugar.
  • Mix in the flour and vanilla extract.
  • Fold in the date mixture, transfer to the tin, and bake for 40 minutes.
  • Boil the cream, butter, sugar, and Guinness in a pan for the sauce.
  • Stir in the blackcurrant liqueur.
  • Serve pudding slices drizzled with sauce and topped with whipped cream.
