Steps

  • Cut a circle of fruit loaf and press it into a 5cm chef's ring on a plate.
  • Mix mascarpone, whipped cream, vanilla seeds, chopped ginger, syrup, and honey in a bowl.
  • Spoon the cream mixture over the fruit loaf base inside the ring.
  • Level and smooth the surface using a palate knife.
  • Warm the ring edges with a blow torch and lift the ring away.
  • Garnish with orange slices, cinnamon, toasted almonds, and mint.
