Steps

  • Simmer orange juice, zest, cloves, and rhubarb in a large saucepan for 10-12 minutes.
  • Strain the mixture through a fine sieve into a jug, pressing the fruit to extract juice.
  • Return 150-200ml of liquid to a clean saucepan and stir in sugar and ground cinnamon to taste.
  • Simmer for 3-4 minutes until the liquid forms a light syrup that coats a spoon.
  • Pour the syrup into a sterilised bottle and cool before sealing.
