Steps

  • Wash 1kg clams thoroughly and discard any that stay open when tapped.
  • Heat 1 tablespoon of oil in a pan and cook clams covered for 4 minutes until opened.
  • Transfer clams to a bowl and keep warm while discarding any unopened shells.
  • Heat remaining oil in the pan and gently cook garlic and cherry tomatoes.
  • Add clam juices, season with salt and pepper, and simmer for 20 minutes.
  • Stir the clams and chopped parsley into the sauce.
  • Toss 500g cooked spaghetti into the sauce to coat thoroughly.
  • Serve the pasta immediately in warm bowls.
