Steps

  • Rub chicken with 2 tablespoons of curry powder and refrigerate overnight.
  • Browning the chicken in oil over medium heat until colored.
  • Sauté onions, garlic, potatoes, and chillies until softened.
  • Return chicken to the pan with remaining spices and cover with stock.
  • Simmer gently for 30 to 40 minutes until potatoes are soft.
  • Garnish with spring onions and serve with rice or roti.
