fresh, cut into a cylinder shape or thick steak

Method

Grind all the spices into a fine powder using a spice grinder.

Coat all sides of the tuna cylinder in the spice mix.

Sear the tuna in a hot pan for 30 seconds per side.

Wrap the tuna tightly in cling film and chill in the fridge.

Blend the avocado, lime juice, and Tabasco until smooth.

Season the avocado purée with salt and pepper.

Toss the apple, radishes, shiso, and daikon cress with olive oil and seasoning.

Spread the avocado purée onto two serving plates.

Slice the chilled tuna into 5mm thick pieces and season.

Arrange the tuna and salad on the plates and serve.
