Steps

  • Mix the Stilton and butter into a smooth paste.
  • Roll the mixture in cling film into a 2.5cm thick cylinder and chill in the fridge.
  • Griddle the ciabatta on both sides until the bread is golden.
  • Sear the lamb fillet for 2 minutes on each side in a hot pan.
  • Allow the lamb to rest briefly before slicing into pieces.
  • Arrange rocket and lamb on the ciabatta and top with discs of Stilton butter.
