Steps

  • Place egg yolks, mustard, and a pinch of salt into a food processor and blend.
  • Combine the vegetable and olive oils and slowly drizzle half into the processor while blending.
  • Add lemon juice to the thickening mixture and gradually pour in the remaining oil while running.
  • Add vinegar and season the mayonnaise with salt and black pepper to taste.
  • Serve 100g of radishes on a plate with the mayonnaise and 50g of rock salt in separate ramekins.
