Steps

  • Whisk soy sauce, sesame oil, and one chopped chilli together in a bowl.
  • Heat vinegar, sugar, and remaining chilli in a pan until sugar dissolves, then cool.
  • Blend prawns into a purée using a food processor.
  • Mix prawn purée with bamboo shoots, sesame oil, wine, pepper, sugar, and salt.
  • Place a spoonful of filling onto each wrapper and seal edges with damp fingers.
  • Steam parcels in a bamboo steamer over simmering water for 5 minutes.
  • Serve the hot dim sum immediately with both dipping sauces.
