Steps

  • Fry the pancetta in olive oil in a lidded saucepan until golden-brown, then remove and set aside.
  • Brown the pork in the same pan for 5 minutes.
  • Add garlic, honey, and ginger, cooking until the mixture caramelizes.
  • Add vegetables, rosemary, pancetta, 300ml stock, and pepper, then cover and simmer for 30 minutes.
  • Remove the tender vegetables and set them aside.
  • Simmer the meat alone for another hour until tender.
  • Cool the meat slightly and carve into thick slices.
  • Return the meat and vegetables to the pan to heat through before serving.
