Steps

  • Boil the oranges in a large saucepan of water for two hours.
  • Preheat the oven to 175°C and prepare a 23cm cake tin with butter and flour.
  • Cool the oranges, slice into quarters, and remove the pips.
  • Pulp the oranges in a food processor.
  • Beat the eggs and stir in the orange pulp, almonds, sugar, and baking powder.
  • Pour the batter into the tin and bake for 60 minutes until golden.
  • Cool the cake in the tin on a wire rack before removing and slicing.
