Ground Almonds
Method

Boil the oranges in a large saucepan of water for two hours.

Preheat the oven to 175°C and prepare a 23cm cake tin with butter and flour.

Cool the oranges, slice into quarters, and remove the pips.

Pulp the oranges in a food processor.

Beat the eggs and stir in the orange pulp, almonds, sugar, and baking powder.

Pour the batter into the tin and bake for 60 minutes until golden.

Cool the cake in the tin on a wire rack before removing and slicing.
