Steps

  • Preheat the oven to 200°C.
  • Lay the pancetta flat on a baking tray and bake for four minutes until crispy.
  • Drain the crispy pancetta on kitchen paper.
  • Stir-fry the choi sum in sesame oil in a hot wok for two minutes.
  • Add the soy sauce to the wok and remove from the heat.
  • Toss the choi sum in a bowl with the mango and coriander.
  • Transfer to a plate and garnish with the crispy pancetta.
