Steps

  • Place the egg yolks into a large bowl.
  • Whisk the sugar into the egg yolks until the mixture is pale and thick.
  • Whisk the cornflour into the egg mixture until well incorporated.
  • Combine the cream and milk in a medium saucepan.
  • Scrape the vanilla seeds into the milk and cream mixture.
  • Heat the mixture to just below boiling point and remove the vanilla pod.
  • Slowly pour the hot liquid onto the egg mixture while whisking constantly.
  • Transfer the mixture to a clean pan over very low heat.
  • Stir constantly for 10 minutes until the custard thickens and coats the back of a spoon.
