Steps

  • Preheat a barbecue or griddle pan until hot.
  • Season the steak with pepper, drizzle with oil, and grill for five minutes, turning once.
  • Grind chilli, sugar, garlic, and salt in a pestle and mortar for two minutes.
  • Add coriander and mint to the mortar and grind for another minute.
  • Stir in the fish sauce, soy sauce, and lime juice and zest to complete the dressing.
  • Arrange lettuce wedges, peas, radishes, and coriander leaves in a bowl.
  • Toss the salad with the dressing, slice the beef, and place it on top.
