Steps

  • Rub the squid with olive oil and season with salt and pepper.
  • Cook the squid in a smoking hot griddle pan for 2 minutes until chargrilled.
  • Heat olive oil in a sauté pan and gently cook chilli, garlic, and lemongrass for one minute.
  • Add lime juice, soy sauce, sesame oil, and egg noodles to the pan.
  • Stir in the beaten egg and sugar, cooking for 2 minutes to coat the noodles.
  • Mix in most of the coriander and serve topped with the squid and remaining garnish.
