Steps

  • Preheat the oven to 200°C.
  • Slice the potato into chips and drizzle with 30ml of oil on a baking sheet.
  • Place halved tomato on the sheet and bake for 30-40 minutes until chips are crisp.
  • Heat 15ml of oil in a pan and fry the seasoned gammon for 5-6 minutes until cooked.
  • Set gammon aside to rest in a warm place.
  • Fry the eggs in the remaining oil until the yolks are just set.
  • Serve gammon with chips and tomato, topped with the fried eggs.
