Steps

  • Season the steaks and sear in a hot pan with olive oil for 5 to 6 minutes then keep warm.
  • Boil the wine in the same pan to reduce by half, then add beef stock and reduce further.
  • Mix egg yolks, mustard, breadcrumbs, Worcestershire sauce, Tabasco, milk, beer, and Stilton into a thick paste.
  • Top the steaks with the rarebit mixture and grill on high heat until golden brown.
  • Whisk butter and pesto into the reduced sauce and serve around the steaks.
