Method

Preheat the oven to 220°C.

Trim the fennel base and shave into thin slices using a mandoline.

Soak fennel slices in iced water for 12 minutes to crisp.

Peel the orange and grapefruit, following the curve of the fruit.

Remove fruit segments over a sieve to catch all the juices.

Squeeze remaining juice from the pulp and discard the pulp.

Whisk citrus juices with olive oil, salt, and pepper to make a dressing.

Drain fennel and toss with citrus segments and the dressing.

Heat the grill to its highest setting.

Slash mackerel skins at 2cm intervals and place in a dish.

Combine butter, spices, sugar, mustard, and vinegar to create a paste.

Rub the spiced butter thoroughly over and inside the mackerels.

Grill the fish for 5 minutes per side until firm and cooked.

Serve the spiced mackerel alongside the citrus and fennel salad.
