Steps

  • Mix flour, chilli flakes, chives, salt, and pepper in a bowl, then whisk in cold sparkling water until smooth.
  • Heat vegetable oil in a saucepan until a bread cube sizzles and browns in 30 seconds.
  • Dip prawns into the batter and fry in hot oil for 2-3 minutes until golden-brown.
  • Drain fried prawns on kitchen paper with a slotted spoon.
  • Boil rice noodles, drain, and refresh under cold water.
  • Stir soy sauce, sesame oil, sesame seeds, and coriander into the noodles and season to taste.
  • Serve prawns over the noodle salad garnished with lime wedges.
