Steps

  • Heat vegetable oil in a heavy-bottomed saucepan until a breadcrumb sizzles.
  • Brush a sheet of filo pastry with beaten egg.
  • Layer three sheets of pastry for each base, brushing with egg between layers.
  • Place two apricots onto each pastry base and drizzle with honey.
  • Fold and seal the pastry edges with egg to create parcels.
  • Deep-fry the parcels for three minutes until golden and drain on towels.
  • Coat the hot parcels in a mixture of sugar and mixed spice.
  • Serve each parcel immediately with a dollop of Greek yoghurt.
