Steps

  • Preheat the oven to 200°C.
  • Melt the sugar in a small ovenproof frying pan.
  • Add the vanilla pod and cook until the sugar reaches a deep caramel color.
  • Stir in the orange segments to coat and remove the vanilla pod.
  • Mix the egg whites and melted butter in a bowl.
  • Brush the mixture over the pastry sheets, scrunch them, and place them over the oranges.
  • Bake for 5-6 minutes until the pastry is crisp and golden-brown.
  • Transfer the croustade to a dish for serving.
